Squash Casserole

This can be made with many different kinds of vegetables. We particularly like it with broccoli and cauliflower.
Ingredients
- 1 bag yellow squash
 - 1 yellow onion
 - 1 pack saltine crackers
 - 1 egg
 - 1 or 2 cups cheese
 - 1 stick butter
 - Salt and pepper to taste
 
Instructions
- Boil squash and onion until squash is soft and can be mashed
 - Strain and mix solids with remaining ingredients
 - Put in 8x8 casserole dish and bake at 350 until top starts to brown, about 20 to 25 minutes
