Squash Casserole

This can be made with many different kinds of vegetables. We particularly like it with broccoli and cauliflower.

Instructions

  1. Boil squash and onion until squash is soft and can be mashed
  2. Strain and mix solids with remaining ingredients
  3. Put in 8x8 casserole dish and bake at 350 until top starts to brown, about 20 to 25 minutes
