Smoky Black Bean Burger

Ingredients
Burgers
- 1 small onion (about 1 cup) chopped
 - 1 1/2 cups cooked quinoa
 - 2 cans (30oz) black beans, drained and rinsed
 - 1/2 cup bread crumbs
 - 1 1/2 teaspoons smoked paprika
 - 1 teaspoon garlic powder
 - 3/4 teaspoon oregano
 - 3/4 teaspoon cumin
 - 1/2 teaspoon salt
 
Glaze
- 2 tablespoons apple cider vinegar
 - 2 tablespoons maple syrup
 - 2 teaspoons soy sauce
 - 2 teaspoons tomato paste
 - 2 teaspoons sriracha

 - Garlic mayo (mayo with a litle bit of garlic mixed in)
 
Instructions
- Cook quinoa and saute onions. Allow them to cool before making burgers.
 - Prepare the glaze by mixing all the glaze ingredients in a bowl. Adjust flavors according to your taste (I usually add a bit of salt, too).
 - Drain and rinse the black beans. Put in a large bowl. Mash with a potato masher.
 - Add quinoa, onions, bread crumbs, and spices to the bowl. Mash to incorporate ingredients. (You can also use a food processor)
 - Mix the ingredients a bit further with a spatula or your hands.
 - Form 6 patties, about 1/2-3/4" thick
 
Stovetop: Heat oil over medium-high heat, add patties and cook for 5 minutes or until lightly browned. Flip patties and cook another 5 minutes. Remove, brush with glaze.
Oven: Preheat oven to 350F. Line a baking sheet with parchment and bake 12-15 minutes, flip patties, and bake 12-15 minutes more. Brush patties with glaze.
