Mayonnaise

Ingredients

  • 2 egg yolks, room temperature
  • 1 Tbsp Dijon mustard
  • 250ml (1 cup + 3 tsp) vegetable oil
  • 2 tsp white vinegar or lemon juice
  • salt and pepper, to taste

Instructions

  1. In a medium bowl, whisk together the egg yolks and Dijon mustard until fully combined and smooth. Season with a pinch of salt and pepper.
  2. Whisking continuously, add the oil drop by single drop. As the mixture begins to thicken, continue adding the oil in a very thin, slow, and steady stream.
  3. Continue whisking vigorously until all oil is incorporated and the mayonnaise is thick, pale, and glossy.
  4. Whisk in the white wine vinegar or lemon juice until combined. Taste and adjust seasoning as necessary before serving.
