Ingredients
- 2 egg yolks, room temperature
- 1 Tbsp Dijon mustard
- 250ml (1 cup + 3 tsp) vegetable oil
- 2 tsp white vinegar or lemon juice
- salt and pepper, to taste
Instructions
- In a medium bowl, whisk together the egg yolks and Dijon mustard until fully combined and smooth. Season with a pinch of salt and pepper.
- Whisking continuously, add the oil drop by single drop. As the mixture begins to thicken, continue adding the oil in a very thin, slow, and steady stream.
- Continue whisking vigorously until all oil is incorporated and the mayonnaise is thick, pale, and glossy.
- Whisk in the white wine vinegar or lemon juice until combined. Taste and adjust seasoning as necessary before serving.
