General Tso Chicken

Ingredients
- 1 large egg
- 1.5t sesame oil
- 1/4c + 1T soy sauce
- 1/4c + 1T cornstarch
- 1 pound boneless chicken thighs, cut into bite size pieces
- 1T vegetable oil, plus more for frying
- 2T minced ginger
- 3 cloves garlic
- 1c chicken stock
- 3t Sriracha
- 3T sugar
- White Rice
- Broccoli
Instructions
- Separate egg white and yolk. Add egg white to a medium bowl. Discard or set aside egg yolk.
- To the bowl add sesame oil, 1T soy sauce, and 1/4c cornstarch then whisk to combine. Add chicken and marinate for 30 minutes.
- In a small saucepan, heat the tablespoon of oil over medium-high heat. Add ginger and garlic and stir for a minute. Add in stock, Sriracha, sugar, and remaing soy sauce and cornstarch. Whisk to combine then continue whisking until the sauce is thick and glossy. Reduce the heat to low and cover to keep warm.
- Heat the cast iron skillet over medium-high and add 1/2" of oil. When the oil is hot, add the chicken one piece at a time. Turn the pieces so they brown on all sides. Cook until crispy, about 5 minutes. Transfer to a paper towel lined plate.
- Stir the chicken into the sauce and serve with rice and steamed broccoli.
