English Muffins

Instructions

  1. Add liquid ingredients to the bread maker first then add dry ingredients. Make a well in the flour and add the yeast.
  2. Set the bread maker to the dough cycle and let it knead and rise the dough.
  3. Line baking sheets with parchment paper and farina.
  4. When the dough has risen, lightly roll the dough out and cut out 16 muffins. They will be about 1" thick.
  5. Place the muffins onto the cookie sheets and place parchment paper over them. Let rest for 20 minutes.
  6. While the muffins are resting prepare skillets by spraying with vegetable oil and covering with farina and preheat the oven to 350. You could use well seasoned cast iron if you have it. To accomplish this I have to use 4 skillets to cook all the muffins at once. The dough may over-rise if you leave half of them to rest while cooking the others.
  7. Heat the skillets to low and cook the muffins for 6 minutes per side, or until they are lightly browned then return them to the cookie sheets.
  8. Put the muffins in the oven for about 10 minutes until the insides are done.
