Egg White Bites

Ingredients
- 1 red bell pepper
 - 1 green bell pepper
 - 1/4 yellow onion
 - 1/3lb sausage
 - 16oz egg whites
 - 1/2 cup shredded cheese
 
Instructions
- Preheat oven to 350F
 - Cook sausage in a skillet. While cooking, chop peppers and onion.
 - When sausage is cooked, let sit on paper towels to absorb grease
 - Cook peppers and onion in the skillet, season with salt and pepper
 - Put pepper mix on paper towels to absorb liquid. Try to remove as much liquid as you can.
 - Grease a muffin pan with cooking spray
 - Add 2 Tablespoons pepper mixture and 1 Tablespoon ground sausage to each cup
 - Add egg whites to muffin cups until there is about 1/4-inch to the top
 - Sprinkle a little bit of cheese on the top
 - Bake at 350F for 25 minutes. Insert a toothpick to ensure the eggs are fully cooked.
