Cottage Pie

Cottage pie is a variation of the English dish Shepherds pie. The only difference between the dishes is that cottage pie substitutes ground beef for ground lamb.

Ingredients
- 2 lb Beef, Ground
- 2 Carrot
- 2 Celery
- 4 clove Garlic
- 1 Onion, White
- 6 Mushrooms, White
- 2 lb Potatoes
- 3 tbsp Flour
- 4 Parsley, Fresh
- 1 c Beef, Broth
- 2 c Milk
- 2 tbsp Butter
- 2 tbsp Oil, Olive
- 2 c Cheese, Mild Cheddar
- Rosemary to taste
- Thyme to taste
- Nutmeg to taste
- Season Salt to taste
- Salt to taste
- Pepper, Black to taste
Instructions
- Peel and cube the potatoes and cook in a pot of boiling water untill tender
- Heat oil in a large pot and add the vegetables
- Cook vegetables for 15 minutes or until tender
- Add beef to vegetables and cook until beef is no longer pink, do not drain
- Add parsley and beef broth to the beef and vegetables
- Season beef to taste using season salt, Rosemary, Thyme, Nutmeg, salt and pepper
- Mix flour with 1/2 cup of warm water and strain into beef and vegetables
- Continue cooking beef until broth thickens then remove from pan and spread in the bottom of a baking dish
- Drain water from potatoes and combine with butter and milk, whip with an electric mixer
- Add salt and pepper to potatoes to taste
- Spread potatoes on top of beef and vegetables in the baking dish
- Top potatoes with shredded cheese
- Bake
- Allow to cool for at least 10 minutes before serving
- In place of cheese on top of the potatoes you could place slices of butter and paprika.
