Chipotle Blue Cheese Dressing

This makes an excellent topping for a wedge salad. Just add a wedge of iceberg, half of a chopped tomato and two slices of crumbled bacon. It can also be made as just a plain blue cheese dressing by skipping the paprika and chile powder.
Ingredients
- 1 cup (4 oz) crumbled blue cheese
 - 1/2 cup mayonnaise
 - 2 tablespoons of buttermilk (plus more as desired)
 - 1 clove chopped garlic
 - 1/2 teaspoon chipotle chile powder
 - 1/4 teaspoon smoked paprika
 - 2 teaspoons white wine vinegar
 - 1/2 cup sour cream
 - salt and pepper
 
Instructions
- Set aside half of the blue cheese and the sour cream. Blend remaining ingredients with a blender until they reach the desired consistency, add more buttermilk for a thinner dressing.
 - Mix in sour cream and serve with crumbled blue cheese on top
