Asparagus Puff Pastry

Ingredients
- 1 (10x15") sheet puff pastry, thawed (see instructions below)
- 8 oz Gruyere, Manchego, or white cheddar cheese, grated
- 1 bunch asparagus
- salt and pepper
- ~8 slices prosciutto, optional
- Parmesan, optional
Instructions
- Preheat oven to 425F
- Line a baking sheet with parchment paper. Place pastry on the baking sheet. Thaw 30 minutes.
- Sprinkle grated cheese evenly over the pastry sheet
- Break the tough bottoms off the asparagus. Place asparagus spears next to each other on top of the cheese. If using prosciutto, wrap small pieces of prosciutto around the asparagus.
- Sprinkle with salt and pepper. If you have some fresh parmesan that also goes nicely on top.
- Place baking sheet in the oven and bake until golden brown. About 20 minutes. Cut into squares to serve.
