White Bread with Olive Oil

Two loaves of this recipe makes a full 9x13 casserole dish of stuffing for Thanksgiving
Ingredients
- 500g strong white flour, plus extra for dusting
- 10g salt
- 2.5tsp amylase
- 60ml olive oil
- 15g yeast
- 270ml water
Instructions
- Mix all ingredients in a large bowl. Make sure not to put the yeast on top of the salt.
- Turn onto a lightly floured surface and knead well until dough is smooth and slightly elastic
- Put dough back into the bowl and leave to rise for one hour
- Oil a 1lb bread loaf pan
- Tip the dough out onto a lightly floured surface and mold into a loaf shape. Put dough in the tin and leave to rise for 30-60 minutes.
- Preheat the oven to 450F. Dust the top of the dough with flour and bake for 25 minutes.
- Turn the loaf out onto a wire rack to cool
