Vegetarian Chili (Hot)

Spicy vegetarian chili. I got this recipe from work (it won the work chili cook-off). This stuff is SOOOOO good . . . Dad and I have adopted it as our Super Bowl Chili. It is spicy though . . . so great for those who like spicy foods. Can be served with sour cream, rice, onions, cheese.

Ingredients

  • 2 can Soup, Black Bean (Goya)
  • 3 can Beans, chili in hot sauce (Bush)
  • 1 c Onion, Red
  • 1 c Pepper, Green, Minced
  • 1 can Kidney Beans, in sauce
  • 1 can Tomatoes, chili-ready diced (Del Fratelli)
  • 2 can Corn, Fiesta
  • 2 can Beans, Garbanzo (Goya)
  • 1 can Tomatoes, Diced with Lime Juice/Cilantro (Ro-Tel)
  • 2 clove Garlic
  • 1 Pepper, Jalepeno
  • 1 tsp Mustard, Ground
  • 1/2 tsp Pepper, Cayenne
  • 1 tbsp Chili Powder
  • 1 tsp Curry Powder
  • 1/2 tsp Cajun Seasoning
  • 1 tsp Cilantro
  • 1 tsp Paprika
  • 1 can Soup, Tomato
  • 1 can Tomatoes, Whole

Instructions

  1. Mix all ingredients in a large cook pot.
  2. Cook for 3-6 hours on very low heat.
  3. Good crock pot recipe since it can easily cook on 170 degrees for up to six hours.
  4. Use red, green and yellow peppers if you want a nicer look.
