Makes: 4 cups
- Adapted from Homesick Texan
Contributor: Mike & Kate
Ingredients
- 1 pound plum tomatoes, stemmed and halved lengthwise
- 3 jalapeños stemmed and halved (see note)
- 4 garlic cloves, peeled
- 1 cup water
- salt and black pepper
Instructions
- Combine everything but the salt and black pepper in a large pot. Bring to a boil then turn the heat down to low. Simmer for 10-15 minutes, or until the tomatoes are soft.
- Turn off the heat and allow the mixture to cool for 10 minutes.
- Pour the contents of the pot into a blender or food processor and blend until well combined.
- Add salt and black pepper to taste.
- Serve immediately or store in the refrigerator for up to a week.
Note
- We like spicy food so we keep some of the jalapeño seeds in. You can also use between 1-3 jalapeños in the recipe.
- This gets spicier if it sits for a few days.
