Sugar Cookies and Royal Icing

Ingredients

  • 2 cups sugar
  • 1 cup shortening
  • 3 eggs
  • 2 teaspoons vanilla
  • 1 cup sour milk (put 1 T vinegar in measuring cup and add milk to make 1 cup)
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 3 teaspoons baking powder
  • 6 cups flour

Instructions

  1. Mix the vinegar and milk to make sour milk.
  2. Add vanilla to the sour milk; set aside.
  3. In large mixing bowl, cream together sugar and shortening until light and fluffy.
  4. Add eggs, one at a time.
  5. In separate bowl, blend together baking soda, salt, flour and baking powder.
  6. Add flour mixture, alternately with sour milk mixture, to the creamed sugar and egg mixture.
  7. Cover and refrigerate overnight.
  8. On floured surface, roll out dough to desired thickness, about 1/4 inch.
  9. Cut out with desired cookie cutter or cutters.
  10. Bake at 350 degrees for about 5-7 minutes; I like mine soft.
  11. Let set on cookie sheet for 1 minute before removing to wire rack to cool.
  12. Frost when cool.

Royal Icing Ingredients

  • 3oz pasteurized egg whites
  • 1 teaspoon vanilla
  • 4 cups confectioner's sugar

Royal Icing Instructions

  1. In large bowl of stand mixer combine the egg whites and vanilla and beat until frothy.
  2. Add confectioners' sugar gradually and mix on low speed until sugar is incorporated and mixture is shiny.
  3. Turn speed up to high and beat until mixture forms stiff, glossy peaks. This should take approximately 5 to 7 minutes.
  4. Add food coloring, if desired.

For immediate use, transfer icing to pastry bag or heavy duty storage bag and pipe as desired. If using storage bag, clip corner. Store in airtight container in refrigerator for up to 3 days.
