Sticky Rice

Sticky rice, also called glutinous rice or sweet rice is different from standard rice. It has a hard shell which must be softened by soaking otherwise the rice will not cook fully. It also requires steaming beyond the initial cooking. It does not keep as long as normal rice and will dry out within two days so it is best served right away.
Ingredients
- 1c sticky rice
- 2c water
- 3/4 tsp salt (optional)
Instructions
- Add water and rice to a pan, allow to soak for 30 minutes
- Turn heat to high until rice boils, then turn down to medium-low until water evaporates
- Once water has boiled away turn off the heat and cover the pan for 10 minutes, do not remove from burner
- Serve or store covered at room temperature for up to a day
