Spinach Pesto Stuffed Salmon

Baked salmon stuffed with spinach and pesto. Delicious!
Ingredients
- 2 lb Salmon
 - 2 c Basil
 - 1/2 c Cheese, Parmesan
 - 1/2 c Oil, Olive
 - 3 clove Garlic
 - 1/3 c Walnuts, Chopped
 - Salt to taste
 - Pepper, Black to taste
 - 10 oz Spinach, Fresh
 
Instructions
- Make pesto by blending all ingredients together in a blender. Add chopped spinach to blended pesto.
 - Stuff salmon with pesto/spinach mix. Put lemon juice on top of salmon, if desired.
 - Bake on 400 degrees for 25 minutes.
 - Put additional pesto on top of cooked salmon and serve.
