Snickerdoodles

Ingredients
- 2 3/4 cups flour
- 1 tsp baking soda
- 2 tsp cream of tartar
- 1/2 tsp salt (I usually leave this out)
- 1/2 cup shortening
- 8 tablespoons unsalted butter, softened (if you use salted butter, do NOT add additional salt above)
- 2 tsp vanilla extract
- 1 1/2 cups sugar
- 2 large eggs
To roll in:
- 1 T cinnamon
- 3 T sugar for dipping
Instructions
- Oven: 350 degrees F.
- Mix together flour, baking soda, cream of tartar and salt (if desired).
- With mixer, beat together shortening, butter, 1 1/2 cups sugar, eggs and vanilla extract. Add flour mixture and blend until smooth.
- Mix the 3 tablespoons sugar with the cinnamon in a small bowl. Roll the dough, by hand, into 1 1/2-inch balls. Roll the balls in the cinnamon sugar. Place on ungreased cookie sheets about 2 inches apart. Bake until light brown, but not hard, about 12 minutes. Remove from sheet immediately.
