Snickerdoodles

Ingredients

  • 2 3/4 cups flour
  • 1 tsp baking soda
  • 2 tsp cream of tartar
  • 1/2 tsp salt (I usually leave this out)
  • 1/2 cup shortening
  • 8 tablespoons unsalted butter, softened (if you use salted butter, do NOT add additional salt above)
  • 2 tsp vanilla extract
  • 1 1/2 cups sugar
  • 2 large eggs

To roll in:

  • 1 T cinnamon
  • 3 T sugar for dipping

Instructions

  1. Oven: 350 degrees F.
  2. Mix together flour, baking soda, cream of tartar and salt (if desired).
  3. With mixer, beat together shortening, butter, 1 1/2 cups sugar, eggs and vanilla extract. Add flour mixture and blend until smooth.
  4. Mix the 3 tablespoons sugar with the cinnamon in a small bowl. Roll the dough, by hand, into 1 1/2-inch balls. Roll the balls in the cinnamon sugar. Place on ungreased cookie sheets about 2 inches apart. Bake until light brown, but not hard, about 12 minutes. Remove from sheet immediately.
