S'more Cookies
- Makes: 30 cookies

Ingredients
- 1/2c softened butter
- 3/4c brown sugar
- 1/4c sugar
- 1 egg
- 1t vanilla
- 1c graham cracker crumbs
- 1 3/4c flour
- 1/2t salt
- 1t baking powder
- 1/2t baking soda
- 15 large marshmallows, cut in half
- 30 Hershey kisses
Instructions
- Preheat the oven to 350F
- Cream butter and sugars with a mixer
- Mix in the egg and vanilla
- In another bowl whisk together baking soda, baking powder, salt, flour and graham cracker crumbs
- Gradually mix in the flour mixture to the butter mixture until a soft dough is formed
- Roll 1-inch balls and place them on a cookie sheet lined with parchment paper
- Bake cookies for 7 minutes or until tops are golden
- Cut marshmallows in half with scissors and unwrap the kisses
- Remove from oven and top each cookie with a marshmallow half sticky side down
- Bake 1-1.5 minutes longer until the marshmallow puffs up
- Remove from the oven and top each with a Hershey Kiss
- Rest on cookie sheets for 2-3 minutes
- Transfer to a cooling rack to cool completely
