Single Crust Pie Dough

Ingredients

  • 1 1/4 cup all-purpose flour
  • 2T sugar
  • 1/4t salt
  • 8T unsalted butter, softened
  • 2 oz. cream cheese, softened

Instructions

  1. Grease a 9" pie plate.
  2. Whisk the flour, sugar, and salt together in a medium bowl.
  3. In a large bowl, beat the butter and cream cheese together with an electric mixer on medium-high speed until completely combined (~2 minutes).
  4. Reduce the mixer speed to medium-low and beat in the flour mixture until it resembles coarse crumbs (~20 seconds).
  5. Increase the mixer speed to medium-high and beat until the dough begins to form large clumps (~30 seconds).
  6. Transfer 3 Tablespoons of the dough to a small bowl.
  7. Turn the remaining dough clumps out onto a lightly floured work surface, gather into a ball, and flatten into a 6-inch disk. Transfer the disk to the prepared pie plate.
  8. Press the dough evenly over the bottom of the plate and up the sides until evenly distributed.
  9. On a lightly floured work surface, roll the reserved 3 Tablespoons of dough into 3 8-inch long ropes. Arrange the ropes around the top of the pie plate, leaving small gaps between them. Squeeze the ropes into the crust to make a uniform edge. Crimp the edge of the dough.
  10. Cover loosely with plastic wrap and place in the freezer until the dough is fully chilled and firm (~30 minutes) before using.
