Heat a drizzle of olive oil over medium heat 1. Add sausage to the pan in a single layer 1. When sausage begins to brown on one side add the chickpeas, smashing them by hand as you add them to the skillet 1. Add garlic and Italian seasoning then stir everything to combine 1. Cook until sausage is browned and chickpeas are lightly browned 1. Transfer to a bowl === Wilt Escarole === 1. Scrape any fond on the skillet, add a drizzle of olive oil and heat on medium heat 1. Add escarole and cook until the escarole is wilted and the stems soften 1. Transfer escarole to the bowl of sausage and chickpeas === Gnocchi === 1. Begin boiling water for the gnocchi now 1. After you finish the sauce boil the gnocchi according to package directions (usually 5 minutes) === Sauce === 1. Measure out all the sauce ingredients in advance 1. Heat the skillet over medium heat and melt the butter 1. Add the grated garlic and cook for 30 seconds until fragrant but not browned 1. Add flour and whisk constantly until golden, about 1 minute 1. Begin adding milk with just a splash and whisk to incorporate it. Continue adding milk in small amounts and incorporate fully before adding more milk. 1. After all the milk is added, reduce heat to medium-low and whisk until sauce thickens. About 5 minutes. 1. Add Parmesan, salt, and pepper. Then add nutmeg.
