Sauerkraut Salad
Ingredients
- 6 cups (32oz) sauerkraut (preferably a very crisp sauerkraut)
 - 4oz thinly sliced salami cut into strips
 - 1/2c diced Sorghum Mustard pickles or other sweet pickle
 - 2T sweet pickle juice
 - 1 whole pickled jalapeno, diced or about 12 diced slices
 - 4 green onion tops, chopped (optional)
 - pinch caraway seeds
 - salt and black pepper
 
Instructions
- Drain and squeeze the juice from the sauerkraut
 - Toss all ingredients together in a bowl till coated
 - Add salt and pepper to taste
 - Chill for at least 1 hour before serving
