Sauerkraut Salad

Ingredients

  • 6 cups (32oz) sauerkraut (preferably a very crisp sauerkraut)
  • 4oz thinly sliced salami cut into strips
  • 1/2c diced Sorghum Mustard pickles or other sweet pickle
  • 2T sweet pickle juice
  • 1 whole pickled jalapeno, diced or about 12 diced slices
  • 4 green onion tops, chopped (optional)
  • pinch caraway seeds
  • salt and black pepper

Instructions

  1. Drain and squeeze the juice from the sauerkraut
  2. Toss all ingredients together in a bowl till coated
  3. Add salt and pepper to taste
  4. Chill for at least 1 hour before serving
