Beans and Rice

This recipe is quick and easy. The lemon rind is an interesting and delicious addition.

  1. In a large saucepan, heat oil over medium heat. Add onion and garlic and cook, stirring frequently, until onion is tender.
  2. Add red pepper and rice, stirring to coat. Stir in water or stock and lemon rind and salt. Bring to a boil. Reduce heat to simmer, cover and cook until rice is tender.
  3. Add beans and heat through. Stir in coriander and toasted almonds just prior to serving.
