Beans and Rice

This recipe is quick and easy. The lemon rind is an interesting and delicious addition.
Ingredients
- 1 tbsp Oil, Olive
- 1 Onion, Minced
- 1 clove garlic, clove
- 1 Pepper, Fresh, Red
- 1 c Rice, Basmati
- 1 1/2 tsp Lemon Rind
- 1 tsp Salt
- 1 c Beans, Kidney
- 1/3 c Coriander
- 1/4 c Almonds
- 2 c Chicken, Broth
Instructions
- In a large saucepan, heat oil over medium heat. Add onion and garlic and cook, stirring frequently, until onion is tender.
- Add red pepper and rice, stirring to coat. Stir in water or stock and lemon rind and salt. Bring to a boil. Reduce heat to simmer, cover and cook until rice is tender.
- Add beans and heat through. Stir in coriander and toasted almonds just prior to serving.
