Pesto with Kale

Ingredients

  • 1 1/2 c Kale
  • 1 1/2 c Basil
  • 2/3 c Pine Nuts
  • 8 clove Garlic
  • 1 can Olives, Black
  • 2/3 c Oil, Olive
  • 1/2 envelope Lime, juice
  • 1/3 c Parmesan Cheese
  • 1 tsp Vinegar, Red Wine
  • 1 Cumin
  • 1 Pepper, Cayenne
  • 1 Pepper, Black

Instructions

  1. Place the kale, basil, pine nuts, garlic and olives (6oz) in a food processor, and chop to a corse paste. Mix in olive oil, lime juice, vinegar, cumin, cayenne pepper, parmesan cheese, salt and pepper. Process until well blended and smooth.
