Mashed Potato Casserole

Ingredients
- 1.5lbs yukon gold potatoes, peeled and cut into 1/2" slices 
 - 1.5lbs baking potatoes, peeled and cut into 1/2" slices 
 - 5 garlic cloves, thinly sliced 
 - 1.25t kosher salt 
 - 6oz low-fat cream cheese, softened 
 - cooking spray 
 - 2oz parmigiano-reggiano, grated 
 - 1/2c panko 
 - 2T thinly sliced chives 
 
Instructions
- Preheat oven to 350 
 - Place potatoes, garlic and 1/2t salt in large sauce pan; cover with water. Boil. Reduce heat; simmer 15 minutes till tender. Drain in colander over a bowl, reserving 1/2c cooking liquid. 
 - Press potato mixture through a ricer into large bowl. Stir in reserved 1/2c cooking liquid, remaining 3/4t salt and cream cheese. 
 - Spoon potato mixture into a broiler-safe 11 x 7" baking dish coated with cooking spray. Bake at 350 for 20 minutes or until thoroughly heated. 
 - Preheat broiler 
 - Combine parmigiano-reggiano and panko; sprinkle evenly over top of potatoes. Broil for 4 minutes until golden brown. Sprinkle with chives.
