Coat a baking pan lightly in butter and confectioners sugar 1. Combine gelatin with 1/2 cup of cold water in a mixing bowl and stir, allow the gelatin to sit for 10 minutes 1. Combine sugar, corn syrup and 1/4 cup of water in a pot and bring to a boil over low heat being careful not to burn the sugar 1. Using a candy thermometer to check the temperature, boil the sugar mixture until it reaches 250° F 1. Combine sugar mixture, vanilla extract and gelatin in mixing bowl 1. Using an electric mixer, carefully mix sugar and gelatin mixture for about 8 minutes or until it is a white fluffy mixture 1. Pour the white mixture into the buttered pan and allow it to sit for 3-5 hours 1.
