Marshmallows

There are mainly two types of marshmallow recipes: those which use sugar, corn syrup, and gelatin only and those that fold in an egg white meringue before cooling. This recipe uses no eggs.

The first time I made this I forgot to add the vanilla extract and half of the corn syrup. The marshmallows came out exactly like the center of Peeps in taste and texture.

Ingredients

  • 3 tbsp Unflavored Gelatin
  • 3 c Sugar, White
  • 2/3 c Karo
  • 1 tbsp Vanilla
  • 1 c Sugar, Confectioners
  • 2/3 c Water
  • 1 stick Butter

Instructions

  1. Coat a baking pan lightly in butter and confectioners sugar
  2. Combine gelatin with 1/2 cup of cold water in a mixing bowl and stir, allow the gelatin to sit for 10 minutes
  3. Combine sugar, corn syrup and 1/4 cup of water in a pot and bring to a boil over low heat being careful not to burn the sugar
  4. Using a candy thermometer to check the temperature, boil the sugar mixture until it reaches 250° F
  5. Combine sugar mixture, vanilla extract and gelatin in mixing bowl
  6. Using an electric mixer, carefully mix sugar and gelatin mixture for about 8 minutes or until it is a white fluffy mixture
  7. Pour the white mixture into the buttered pan and allow it to sit for 3-5 hours
  8. Pull marshmallow from pan, cut into squares and lightly coat with confectioners sugar
