Lentil Soup

Ingredients
- 1 Onion, Minced
- 1/4 c Oil, Olive
- 2 Carrot
- 2 Celery
- 2 clove Garlic
- 2 tsp Oregano
- 3 Bay Leaf
- 2 tsp Basil
- 1 tsp Cumin
- 2 tsp Chili Powder
- 15 oz Tomatoes, Crushed
- 2 c Lentils
- 8 c Chicken, Broth
- 1/2 c Spinach, Fresh
- 2 tbsp Vinegar, Apple Cider
- Salt to taste
- Pepper, Black to taste
Instructions
- In a large soup pot, heat oil over medium heat. Add onions, carrots, celery; cook and stir until onion is tender. Stir in garlic, bay leaf, oregano, and basil; cook for 2 minutes.
- Stir in lentils and add water and tomatoes. Bring to a boil. Reduce heat and simmer for at least one hour.
- When ready to serve, stir in thinly sliced spinach and cook until it wilts. Stir in vinegar. Season to taste with salt and pepper. Add more vinegar if desired.
