Kohlrabi and Kielbasa

  1. Sear the sausages by heating olive oil in a deep pan over medium-high heat. Brown on all sides then remove and set aside.
  2. Lower heat to medium and melt butter. If using onion, add that and cook 5-7 minutes until it begins to brown. Then, add sugar, kohlrabi, and caraway (add onion powder here if you're using that) and saute for 3 minutes.
  3. Add garlic, bell pepper, salt, and pepper flakes. Sauté for 2 minutes.
  4. Return sausages to the pan and add the beer.
  5. Simmer, covered, over low heat for 20 minutes
  6. Remove lid and cook for 5 more minutes to reduce liquid
  7. Add sour cream and mustard and stir to combine
