Kohlrabi and Kielbasa

Ingredients
- 4 kielbasa sausages (approximately 12-16 ounces total)
 - olive oil
 - 2 Tbsp butter
 - 1 tsp onion powder (the original recipe called for 1/2 yellow onion)
 - 3 Tbsp brown sugar, firmly packed
 - 4 cups kohlrabi, peeled and sliced 1/4" thick (about 4-6 small kohlrabi)
 - 1 tsp caraway seeds
 - 6 cloves garlic
 - 1 red bell pepper, stepped, seeded, and sliced into 2" strips
 - 1 tsp salt
 - 1 tsp red pepper flakes
 - 1 cup lager
 - 4 tsp sour cream
 - 2 tsp coarse-grain mustard
 
Instructions
- Sear the sausages by heating olive oil in a deep pan over medium-high heat. Brown on all sides then remove and set aside.
 - Lower heat to medium and melt butter. If using onion, add that and cook 5-7 minutes until it begins to brown. Then, add sugar, kohlrabi, and caraway (add onion powder here if you're using that) and saute for 3 minutes.
 - Add garlic, bell pepper, salt, and pepper flakes. Sauté for 2 minutes.
 - Return sausages to the pan and add the beer.
 - Simmer, covered, over low heat for 20 minutes
 - Remove lid and cook for 5 more minutes to reduce liquid
 - Add sour cream and mustard and stir to combine
