I think it might help to add 1/2 cup of vegetable oil to keep it moist. ## Ingredients * 1 cup (340g) honey * 1/2 cup (115g) unsalted butter * 2 cups (250g) all-purpose flour * 2 tbsp cocoa powder * 1 tsp baking soda * 2 tsp [gingerbread spice](Recipes/GingerbreadSpice) * Pinch of salt * 2 large eggs * 1/4 cup (60ml) buttermilk * 1/2 cup (120g) apricot jam * 1 cup (170g) semi-sweet chocolate (do not use chocolate chips) * 2 tbsp butter ## Instructions 1. Melt Honey and Butter: In a saucepan, melt honey and butter. Let cool slightly. 1. Mix Dry Ingredients: Combine flour, cocoa powder, baking soda, gingerbread spice, and salt. 1. Combine Wet Ingredients: Beat eggs and mix with the cooled honey mixture and milk (or buttermilk). Gradually add dry ingredients until just combined. 1. Bake the Cake: Pour batter into a lined 9×13 pan. Bake at 350°F (175°C) for 25-30 minutes. Cool completely. 1. Add Jam and Glaze: Spread warmed apricot jam over the cake. Melt chocolate with butter and spread as a glaze. 1. Serve: Let the glaze set before slicing and serving.
