Honigkuchen (German Honey Cake)

Note: This cake is delicious but can dry out pretty fast. I think it might help to add 1/2 cup of vegetable oil to keep it moist.
Ingredients
- 1 cup (340g) honey
- 1/2 cup (115g) unsalted butter
- 2 cups (250g) all-purpose flour
- 2 tbsp cocoa powder
- 1 tsp baking soda
- 2 tsp gingerbread spice
- Pinch of salt
- 2 large eggs
- 1/4 cup (60ml) buttermilk
- 1/2 cup (120g) apricot jam
- 1 cup (170g) semi-sweet chocolate (do not use chocolate chips)
- 2 tbsp butter
Instructions
- Melt Honey and Butter: In a saucepan, melt honey and butter. Let cool slightly.
- Mix Dry Ingredients: Combine flour, cocoa powder, baking soda, gingerbread spice, and salt.
- Combine Wet Ingredients: Beat eggs and mix with the cooled honey mixture and milk (or buttermilk). Gradually add dry ingredients until just combined.
- Bake the Cake: Pour batter into a lined 9×13 pan. Bake at 350°F (175°C) for 25-30 minutes. Cool completely.
- Add Jam and Glaze: Spread warmed apricot jam over the cake. Melt chocolate with butter and spread as a glaze.
- Serve: Let the glaze set before slicing and serving.
