Combine 2T vinegar, 1t oil, garlic and oregano in a large zip-top plastic bag. Add steak to bag and seal. Let stand for 20 minutes at room temperature, turning once. 2. Heat a grill pan over medium-high heat. Remove steak from bag and discard marinade. Sprinkle 3/8t salt and 1/4t pepper evenly over both sides of steak. Coat pan with cooking spray. Grill meat for 5 minutes each side or until desired degree of doneness. Remove steak from pan and let sit for 10 minutes. Cut steak across grain into thin slices. 3. Combine remaining 1T vinegar, 1T oil, 1/8t salt, 1/8t pepper, yogurt and mustard in a bowl and whisk. 4. Cut off 1/3 of each pita and discard.
