Greek Seasoned Steak Sandwiches

Ingredients
- 3T red wine vinegar
 - 4t olive oil
 - 1T minced garlic
 - 1t dried oregano
 - 12oz flank steak
 - 1/2t kosher salt
 - 3/8t black pepper
 - cooking spray
 - 2T plain fat-free greek yogurt
 - 1/4t dijon mustard
 - 4 (6") whole-wheat pitas
 - 4 romaine lettuce leaves
 - 4 thin red onion slices
 - 1 cucumber, sliced
 - 1 tomato cut into 8 slices
 
Instructions
- Combine 2T vinegar, 1t oil, garlic and oregano in a large zip-top plastic bag. Add steak to bag and seal. Let stand for 20 minutes at room temperature, turning once.
 - Heat a grill pan over medium-high heat. Remove steak from bag and discard marinade. Sprinkle 3/8t salt and 1/4t pepper evenly over both sides of steak. Coat pan with cooking spray. Grill meat for 5 minutes each side or until desired degree of doneness. Remove steak from pan and let sit for 10 minutes. Cut steak across grain into thin slices.
 - Combine remaining 1T vinegar, 1T oil, 1/8t salt, 1/8t pepper, yogurt and mustard in a bowl and whisk.
 - Cut off 1/3 of each pita and discard. Arrange 1 lettuce leaf, 1 onion slice, 1/4 of cucumber slices, 2 tomato slices and 1/4 of steak in each pita. Top with 1T yogurt mixture.
