Crispy Gnocchi with Spinach and Feta Cheese

Ingredients
- 6 ounces baby spinach
- 6 ounces feta cheese crumbles
- 1 lemon
- 5T extra virgin olive oil
- 1 16oz package gnocchi (shelf stable or frozen)
- Fresh dill
Instructions
- Place spinach into a large bowl, add half of the feta, juice from 1 lemon half, 1T olive oil, and a big pinch of salt. Rub ingredients onto the spinach to tenderize it. Set aside to soften.
- Heat a large skillet over medium-high heat and add 2T olive oil. Add gnocchi to the pan and cook for 8-10 minutes until golden and crispy all over. Allow to cool in the pan for 5 minutes to crisp further as they cool.
- Combine gnocchi and spinach. Drizzle with about 2T olive oil (or to taste), and toss with the remaining feta and some fresh dill. Squeeze remaining lemon juice over the dish and serve.
