Frito Salad

Ingredients
Dressing
- 1/4 cup red wine vinegar
 - 1T fresh lime juice
 - 1/2 cup extra-virgin olive oil
 - 2 cloves garlic, minced
 - 2t chili powder
 - salt
 
Salad
- 4 cups mixed greens
 - 2 cups grape tomatoes, quartered
 - 2 jalapenos; stemmed, seeded, and diced
 - 1 green bell pepper; stemmed, seeded, and diced
 - 1/2 cup chopped fresh cilantro
 - 2 cups Ranch-Style Beans or other cooked pinto beans, drained and rinsed
 - 1/2 cup (2 oz) Cotija or feta cheese, crumbled
 - 2 cups Fritos
 
Instructions
- Make the dressing by whisking together all the ingredients until well combined. Add salt to taste.
 - Assemble the salad by tossing together all ingredients except Fritos (and dressing).
 - Immediately before serving add the chips and dressing. You may not need all the dressing, I used about 2/3 of it.
