Frito Salad

Ingredients

Dressing

  • 1/4 cup red wine vinegar
  • 1T fresh lime juice
  • 1/2 cup extra-virgin olive oil
  • 2 cloves garlic, minced
  • 2t chili powder
  • salt

Salad

  • 4 cups mixed greens
  • 2 cups grape tomatoes, quartered
  • 2 jalapenos; stemmed, seeded, and diced
  • 1 green bell pepper; stemmed, seeded, and diced
  • 1/2 cup chopped fresh cilantro
  • 2 cups Ranch-Style Beans or other cooked pinto beans, drained and rinsed

  • 1/2 cup (2 oz) Cotija or feta cheese, crumbled
  • 2 cups Fritos

Instructions

  1. Make the dressing by whisking together all the ingredients until well combined. Add salt to taste.
  2. Assemble the salad by tossing together all ingredients except Fritos (and dressing).
  3. Immediately before serving add the chips and dressing. You may not need all the dressing, I used about 2/3 of it.
