  1. combine mushrooms and onions in a pot with some olive oil, cook until soft adding worcestershire sauce, set aside
  2. in the same pot, make a light roux
  3. add stock to form a veloute
  4. add mushrooms and onions to the veloute; add thyme and cook reducing a little
  5. add cream and nutmeg; salt and pepper to taste
  6. cook until flavors combine
