- 300g egg whites
- 120g sugar
- 150g 70% dark chocolate
Instructions
- whisk egg whites and sugar over hot water until 130F
- finish meringue in stand mixer, to soft peaks
- fold half meringue into melted chocolate
- fold in remainder of meringue
- fill buttered and sugared 6oz ramekins
- knock until leveled
- bake at 375 for 16 minutes
