  1. whisk egg whites and sugar over hot water until 130F
  2. finish meringue in stand mixer, to soft peaks
  3. fold half meringue into melted chocolate
  4. fold in remainder of meringue
  5. fill buttered and sugared 6oz ramekins
  6. knock until leveled
  7. bake at 375 for 16 minutes
