Meat Loaf with Chipotle-Tomato Glaze

Glaze Ingredients
- 1c fire roasted crushed tomatoes (canned)
 - 3 canned chipotle chile in adobo
 - 2T lime juice
 - 1/2t ground allspice
 - 2 cloves garlic
 - Salt, to taste
 
Meat Loaf Ingredients
- 1/2T vegetable oil
 - 1/4 medium yellow onion, finely diced
 - 2 cloves garlic
 - 1lb ground beef
 - 1lb chorizo
 - 1/4c chopped cilantro
 - 2 large eggs
 - 1c finally ground ritz crackers
 - 1t dried oregano
 - 1t ground cumin
 - 1t Worcestershire sauce
 - 1t black pepper
 - 1t kosher salt
 
Instructions
- Preheat oven to 350 degrees and line a large baking sheet with aluminum foil that has been greased
 - In a blender puree glaze ingredients
 - Heat the oil in a skillet on medium-low heat and add the onion. Cook uncovered for 5 minutes stirring occasionally. Add the garlic and cook for 30 seconds longer.
 - Slide the cooked onions and garlic into a large bowl. Add to the bowl the ground beef, chorizo, cilantro, eggs, crackers, oregano, cumin, Worcestershire sauce, black pepper and salt. Mix all ingredients with your hands until combined.
 - Take the meat and form it into a loaf. Place it on the sheet and take half of the chipotle-tomato glaze and spread it on top of the meat loaf. Place meat loaf in the oven and bake for 50 minutes.
 - Remove from oven and spread the remaining glaze on top then place back in the oven for 10 minutes.
 - Remove meat loaf from oven and allow to rest for 15 minutes.
