Chicken Orzo Salad

Ingredients
- 3/4 cup orzo
- 1T olive oil
- 3T lemon juice
- 1/2 teaspoon minced garlic
- 1 cup shredded cooked chicken breast
- 1/2 cup diced cucumber
- 1/2 cup chopped red bell peppers
- 1/3 cup sliced green onions
- 2 cups baby spinach (or arugula)
- 2T fresh dill
- 1/2 cup crumbled goat cheese
Instructions
- Cook chicken
- Cook orzo according to package directions. Drain and set aside.
- Whisk together the oil, lemon juice, garlic and dill. Set aside.
- In a large bowl combine the chicken, vegetables and drained orzo. Season with salt and pepper.
- Toss with the dressing made above. If you're taking this for lunch you can add the dressing when you're ready to eat.
