Chicken Orzo Salad

Ingredients

  • 3/4 cup orzo
  • 1T olive oil
  • 3T lemon juice
  • 1/2 teaspoon minced garlic
  • 1 cup shredded cooked chicken breast
  • 1/2 cup diced cucumber
  • 1/2 cup chopped red bell peppers
  • 1/3 cup sliced green onions
  • 2 cups baby spinach (or arugula)
  • 2T fresh dill
  • 1/2 cup crumbled goat cheese

Instructions

  1. Cook chicken
  2. Cook orzo according to package directions. Drain and set aside.
  3. Whisk together the oil, lemon juice, garlic and dill. Set aside.
  4. In a large bowl combine the chicken, vegetables and drained orzo. Season with salt and pepper.
  5. Toss with the dressing made above. If you're taking this for lunch you can add the dressing when you're ready to eat.
