Cheeseburger Sliders

This recipe works a bit like the sliders from White Castle. The beef cook and steam in the onion juice from the bottom. You can also make this recipe by caramelizing the onions in a skillet and adding those to the top of the beef but it will be a different type of burger than a slider.
Ingredients
- 2lbs 80/20 ground beef (1lb for single)
 - 1 pack Hawaiian rolls
 - Butter
 - Season Salt
 - 1/2 onion
 - 8 slices American Cheese
 - 12 Pickles
 - Yellow Mustard
 
Instructions
- Slice the buns in half horizontally and lay them cut side up on a baking sheet. Butter and bake under a broiler on high until slightly browned and crunchy. (This step is optional but will make it less likely for the beef to make them soggy later)
 - Pre-heat the oven to 350 F
 - Using an mandolin, slice the onion on the smallest setting to make very thin onion slices.
 - Spread the onion on a sheet pan coated in foil. Cover half of the sheet pan for single burgers or the whole sheet pan for double burgers.
 - Kneed the ground beef a few turns until it holds together. Spread it evenly on a piece of wax or parchment paper about the size of the baking sheet. It is very important that the beef have a consistent thickness across the entire sheet so that it cooks evenly. (This is important to prevent incorporating the onions into the beef, which you do not want to do)
 - Flip the beef off of the wax paper on top of the onions. Using a chopstick or finger make holes through the beef to the onion layer about every inch along the length and the width of the beef. This will allow the steam from the onions to escape through the top of the beef.
 - Generously salt the top of the beef with season salt. Bake in a 350 degree oven for 20 minutes.
 - Remove the beef from the oven and, holding the beef with a flipper, drain all of the liquid out of the sheet pan. (This is 80% onion juice and 20% beef fat)
 - Cover the top of the beef with slices of American Cheese, splitting them to cover all the way to the edge. Place the pan under a broiler on high until the cheese has melted and is bubbly.
 - If making double cheeseburgers, split the beef patty down the center and place on top of the toasted rolls in two layers being sure to also scoop up the onions. For singles just place the entire patty on the rolls.
 - For doubles put yellow mustard between the beef layers. For singles top with yellow mustard.
 - Add one or two pickles per slider bun on top of the beef.
 - Top with the roll tops and cut along the seams to serve. Best served hot.
