Buttermilk Bacon-Fat Flour Tortillas

Ingredients
- 2T bacon grease (see note 1)
- 2T unsalted butter
- 2c all purpose flour
- 1/2t baking powder
- 1/4t kosher salt
- 3/4 buttermilk (see note 2)
Instructions
- Once the bacon grease cools add the butter to the skillet. Usually it will melt on its own, but you may heat it on low if you need to.
- Stir together the flour, baking powder and salt in a large bowl.
- Add the bacon grease/butter mixture to the flour mixture until it gets a little clumpy.
- Add the milk mixture and stir lightly until a dough forms.
- Place the dough on a floured surface and knead for 2 minutes. The dough should be firm and smooth.
- Cover the dough and let it rest for one hour. It won't rise very much so don't expect to see much difference.
- One hour later, divide the dough into 8 pieces and roll each piece into a ball.
- Pat out the dough ball into a 4-inch circle and then use a rolling pin to make the tortilla thin and about 8" in diameter.
- Cook each tortilla on medium-high heat in a dry skillet. Cook for about 1 minute on each side or until it looks done to you.
== Notes == 1. Cooking 4 slices of thick cut bacon yields just enough bacon grease for the recipe...and the bacon makes a great appetizer. 1. If you don't have buttermilk the recipe will be just fine if you use a vinegar/milk hack. Take a 1-cup liquid measuring cup and add 1 Tablespoon of white vinegar. Fill the rest of the cup up with milk to the 1-cup line. Let it sit for 5 minutes. Remove 1/4 cup of the mixture leaving you with 3/4 cup milk-vinegar mixture.
