Buttermilk Bacon-Fat Flour Tortillas

  1. Once the bacon grease cools add the butter to the skillet. Usually it will melt on its own, but you may heat it on low if you need to.
  2. Stir together the flour, baking powder and salt in a large bowl.
  3. Add the bacon grease/butter mixture to the flour mixture until it gets a little clumpy.
  4. Add the milk mixture and stir lightly until a dough forms.
  5. Place the dough on a floured surface and knead for 2 minutes. The dough should be firm and smooth.
  6. Cover the dough and let it rest for one hour. It won't rise very much so don't expect to see much difference.
  7. One hour later, divide the dough into 8 pieces and roll each piece into a ball.
  8. Pat out the dough ball into a 4-inch circle and then use a rolling pin to make the tortilla thin and about 8" in diameter.
  9. Cook each tortilla on medium-high heat in a dry skillet. Cook for about 1 minute on each side or until it looks done to you.

Notes

  1. Cooking 4 slices of thick cut bacon yields just enough bacon grease for the recipe...and the bacon makes a great appetizer.
  2. If you don't have buttermilk the recipe will be just fine if you use a vinegar/milk hack. Take a 1-cup liquid measuring cup and add 1 Tablespoon of white vinegar. Fill the rest of the cup up with milk to the 1-cup line. Let it sit for 5 minutes. Remove 1/4 cup of the mixture leaving you with 3/4 cup milk-vinegar mixture.
