Broccoli Cheese Soup (Panera-Style Recipe)

Panera-Style Recipe
Ingredients
- 2T butter
- 1c chopped onion
- 6T melted butter
- 1/3c flour
- 2c half and half
- 2c milk
- 4c chicken stock
- 1c julienned carrots
- 1 pound Broccoli
- 1/4t Nutmeg
- 8oz Cheese, Sharp Cheddar, shredded
- salt and pepper
Instructions
- Saute onion in butter. Set aside.
- Cook melted butter and flour using a whisk over medium heat for 3-4 minutes. Stir constantly and slowly add the milk and chicken stock whisking all the time. Simmer for 20 minutes.
- Add the broccoli, carrots and onions. Cook over low heat until the veggies are tender for 20-25 minutes.
- Pour in batches into blender and puree.
- Return to pot over low heat and add the grated cheese; stir until well blended. Stir in the nutmeg, salt and pepper to taste.
