Aussie Bites

Ingredients
- 1c rolled oats
 - 1/2c whole wheat flour
 - 3 scoops vanilla whey powder
 - 1/8c flax seed
 - 1/8c wheat germ
 - 1/3c brown sugar
 - 1/2c + 1/8c coconut
 - 1/4c sunflower or pumpkin seeds
 - 1/2 dried fruit
 - 1/8c honey
 - 1/2c unsalted butter
 - 1T hot water
 - 1/2t baking soda
 - 1/2t salt
 - 1/2t vanilla
 - 2 eggs, beaten
 
Instructions
- Preheat oven to 350.
 - Mix all dry ingredients.
 - Melt honey and butter together.
 - Combine hot water, baking soda and salt. Add to honey and butter mixture.
 - Add vanilla to butter mixture.
 - Add butter mixture to dry mixture.
 - Add egg to dry mixture.
 - Spoon into mini muffin pans.
 - Bake 10-12 minutes.
